TSFL Medifast "Doritos"

Don't these look delicious? These are chips made out of Medifast Mac & Cheese. You can flavor them pretty much however you like. They are thin and crispy and satisfying.
You can eat this whole bowl!

To be fair, they don't taste anything like Doritos, but they are tasty, nonetheless. You can eat these strait up, or with a little salsa. I think they would also be great for a taco salad, although I would not put them on the bottom of the salad as they would probably get soggy really quick.

Here's what you need:

1 packet Medifast Macaroni & Cheese
2 Tbs. water
1/4 tsp red pepper or chili flakes (give or take depending on your spice tolerance)
1/4 tsp garlic salt
chili powder
cooking spray

Put your mac & cheese, chili flakes & garlic salt in  your pulverizing weapon of choice, i.e. Magic Bullet, food processor, etc. Blitz until fine powder like this.


Dump into a bowl and add water. stir to combine thoroughly and let sit for 2 minutes. Meanwhile, spray a good size piece of parchment with cooking spray then place dough on paper.


Now, this part is important: Fold the parchment in half over the dough and use your hands to spread the dough out from the center towards the edges. It's really important to get it as thin and even as possible. I'm talking PAPER thin, otherwise you'll have chewy crackers instead of nice crispy chips.


Now, carefully peel off the top layer of parchment, using your fingers at times to release it if it sticks. It usually only sticks a little bit on the edges. I trim the parchment so it will lay flat on my cookie sheet.


Sprinkle the chili powder lightly over the top, and a little bit of garlic salt if you like.


Bake at 350 degrees F for 10 minutes. Remove and use a pizza cutter to cut into chip-size pieces. A lot of my chips were fully cooked at this point (usually the ones on the edges) so I removed them from the pan. 



You can tell when they're done because they are crisp and golden. You can tell if they need a few                         more minutes if they are slightly pliable and lighter in color.


Flip them over and bake for a few more minutes, keeping a close eye on them, until they look like this.


Voila! Cheesy chips! 
Like I said, you can flavor these any way you like. You could probably do a lemon pepper, cumin, powdered chipotle or cayenne, smoked paprika, garlic pepper, Italian seasoning, curry, the possibilities are only limited by your imagination.

    These are Yummy!
    I used a rolling pin to thin out the dough & might have gotten it too thin. They cooked all the way within 10 minutes.
    Very chip satisfying...thanks for sharing!

  7. Thank you so much for this idea!!! I had FOUR boxes of mac and cheese and I despise them....but now I look forward to chips each afternoon...and am going through them. I might even order more. Guess what? NO NEED TO USE COOKING SPRAY OR OIL. I was worried about the extra oil/calories.... So, I just put them in the oven with the parchment paper still on top and bottom and baked for 5 minutes....it peeled right off...and then I baked for an additional 7 minutes and they're perfect (at least with my oven). I like to add 1/4 tsp of Mrs Dash (Southwest Chipotle) + 1/2 tsp of Mrs Dash Fiesta Lime. They taste like taco chips. Not too hot either:)

  8. Oh my, just took these out of the oven and they are so tasty and satisfying. The one thing I've missed since beginning this plan is savory crisp bites. I don't care for the pretzel or puff things but these are perfect. And what a way to save tossing the mac and cheese I just couldn't eat. Any ideas for the nasty ziti packages?

    1. Actually, Barbara and Kelly, I do have one recipe for the Ziti that I thought was pretty tasty. Prepare as directed, but use beef broth instead of water. I also added a little garlic powder, a pinch of chili flakes and some black pepper. When it's done, stir in 1 wedge of light laughing cow cheese. I had 2 slices of pepperoni left from my kid's dinner, so I sliced them into little strips and added those as well. It probably isn't allowed, but I was under my calories for the day so I justified it. You could also add a little ground turkey or beef, a couple tablespoons bell pepper (add raw peppers before you cook it), or a couple sliced olives. The end results: It tasted like pizza! I thought it was pretty tasty. I hope this helps!

    2. Try stirring in a spoonful of low sugar spaghetti sauce...or I like a spoonful of ready made pesto (pine nuts, basil, garlic, parmesan) you can find in refrigerator, next to pastas. Haven't tried the ziti, but I do this with the penne.

  11. I see that this was posted a few years ago, but I just wanted to comment in case anyone else comes across this recipe. I made these chips twice so far. The first time I made them just like the recipe said and they were pretty good. Then I tried it with Kernel Seasons Bacon & Cheddar Seasoning (found in the popcorn aisle) and they were AMAZING. If you aren't into spicy food, this is the way to go.

  12. I know you posted this years ago but wanted to update you that these work equally as well with the new optavia Mac and cheese and the flavor is already there. Used the spinach pesto one and they taste like ranch chips! Thanks so much for this recipe!

  17. These aren't bad. I do NOT like the mac and cheese as the package says to make... but this makes it sooooo much better. I'm going to try to change the spices/flavors for next time, but definately makes these better!
